About us

Every slice tells an evening

The dough rests for forty-eight hours and the oven is lit at five in the afternoon. You eat inside or under the pergola, and whoever comes to collect waits their turn at the counter. The pizza comes out when it is ready, never when a timer rings. Andrea makes the dough, Marta runs the room, and on Saturday evening we keep going as long as there are people at the tables.

Four things done properly

    Wood-fired oven

    Ninety seconds on the stone, a tall rim and a dry base. Beech wood, brought down from the Cansiglio.

    Forty-eight-hour dough

    Sourdough starter and stone-ground flour. Two nights in the fridge before it touches the bench.

Tue – Thu: 18:00 – 23:00 · Fri – Sat: 18:00 – 24:00 · Sunday: 12:00 – 14:30 · 18:00 – 23:00. We keep these hours up to date here, though a phone call is always the shortest route.

What do you serve?
